Purpose & Scientific Principle
The exhibits use multimedia interaction to educate the audience about the famous tea leaves in Anhui Province, understand how the tea leaves are processed, and participate in the hands-on experience.
How to Operate
The exhibits are composed of computers, radars, projectors, audio, electronic control systems, etc. The audience can touch and select the tea production process on the graphic board on the wall, and the projection screen will project a video of the animated villain making tea at that position, allowing them to understand how tea is made step by step.
Drying: the time is short at first and then long, and the time is thin at first and then thick.
Greening: It uses high temperature to treat fresh tea leaves to soften them, keep them green, and lose part of their moisture to facilitate rolling.
Temperature: 280~300℃.
Purpose: Use high temperature to kill the catalytic enzymes in green leaves, inactivate the enzymes, keep the leaves green, use thermal chemical reactions to eliminate the green smell, bitterness, and astringency in the leaves, and transform them into cured green leaves with a floral and mellow taste, which can reduce damage to tea leaves.
Rolling: The water content of tea leaves is 60%, which is suitable for shaping; increasing the leaf temperature will enhance the plasticity of rolling.
Mendui: The tea leaves fried in a pot are piled up and covered with a cloth to make them turn yellow.
Fermentation: The key to determining the color, aroma and taste quality of tea. Fermentation begins with rolling. Due to the pressure of rolling, leaf cells are damaged, polyphenols are damaged in mold oxidation, polymerization is accelerated, and fermentation begins. The initial fermentation temperature is 32℃~40℃. 15℃~18℃ in the later stage. In the early stages of fermentation, the oxidation rate is high, so adequate oxygen supply is required and the room should be well ventilated.
Drying:
The first stage: evaporate water to prevent mildew-promoting effects, lose water quickly, and reduce the moisture content from about 60% to about 47%, which is beneficial to removing foreign odors, raising temperature, and increasing ventilation.
The second stage: shaping (rolling), the moisture content is reduced to about 18%.
The third stage: dry enough, with a moisture content of about 5%.
The drying temperature is about 80℃~130℃.
